Pumpkin quinoa arancini balls

These golden balls of goodness will give you a nice energy boost.

Serves 12


  • ¼ butternut pumpkin, roasted
  • ½ small sweet potato, roasted
  • 2 eggs, beaten
  • 4 garlic cloves, crushed
  • 1 cup shallots, diced
  • ¼ cup basil, chopped
  • ¼ cup parsley, chopped
  • 2 tbsp nutritional yeast
  • ¾ cup almond meal + extra for coating
  • 2 cups quinoa, cooked
  • 2 tbsp olive oil
  • 1 tsp paprika


  1. Preheat oven to 160°C and line a baking tray.
  2. Mash the sweet potato and pumpkin together (or put in a food processor) and combine.
  3. Mix through all other ingredients (excluding oil) until combined.
  4. Spoon 2 tbsp of mixture at a time and roll into balls. Roll into additional almond meal to coat.
  5. Place balls on baking tray, drizzle with oil and bake in the oven for about 20 minutes or until golden brown.
  6. Allow to cool and store in an airtight container.
