Healthy mango coconut popsicles

Beat the heat. Here is a recipe for all the family to enjoy this summer. These delicious ice treats will be a real hit at any gathering or event.

Serves 8


  • 2 cups fresh or frozen mango, chopped
  • 2 tbsp. chia seeds
  • 1 cup coconut milk


  1. Blend mango in a food processor until smooth. Add a dash of water if needed.
  2. Pour the mango evenly between 8 popsicle moulds and place in the freezer for 20 minutes. Place the stick into the centre of each popsicle and put back into the freezer for 30 minutes.
  3. Mix coconut milk and chia seeds together and pour into each popsicle mould on top of the mango, and place back in the freezer for 2 hours.

TIP: You may wish to layer the two flavours in smaller sections, or to mix the two ingredients together for a creamy mango flavour.
