Healthy mango coconut popsicles
Beat the heat. Here is a recipe for all the family to enjoy this summer. These delicious ice treats will be a real hit at any gathering or event.
- 2 cups fresh or frozen mango, chopped
- 2 tbsp. chia seeds
- 1 cup coconut milk
- Blend mango in a food processor until smooth. Add a dash of water if needed.
- Pour the mango evenly between 8 popsicle moulds and place in the freezer for 20 minutes. Place the stick into the centre of each popsicle and put back into the freezer for 30 minutes.
- Mix coconut milk and chia seeds together and pour into each popsicle mould on top of the mango, and place back in the freezer for 2 hours.
TIP: You may wish to layer the two flavours in smaller sections, or to mix the two ingredients together for a creamy mango flavour.
