Coriander and lemon chicken

This coriander and lemon chicken recipe is full of delicious flavours, healthy and super easy to make.

  • 2 large bunches coriander, chop leaves coarsely
  • 2 garlic cloves, finely chopped
  • 5cm ginger, thinly sliced
  • 2 lemons, juiced
  • ½ tsp turmeric
  • 1 tsp paprika
  • ½ tsp chilli powder (optional)
  • 1 tsp cumin seeds
  • 1 tsp sea salt
  • 1 kg chicken thigh fillets
  • 2 tbsp olive oil


  1. Combine coriander, garlic, ginger, lemon juice, turmeric, paprika, chilli, cumin and salt, and mix well.
  2. Add chicken, toss well and leave in marinade for 30 minutes, stirring from time to time.
  3. Heat oil in pan, add chicken with marinade and cook over moderate heat until tender.
  4. Serve with steamed vegetables and salad.
