Colcannon potatoes

  • 2 cups cabbage (green or red), shredded finely
  • ¼ cup milk
  • 100 g sweet potatoes, diced
  • 150 g potatoes, diced
  • 2 spring onion, chopped
  • 1 tsp nutmeg, freshly grated
  • 2 tbsp butter, melted
  • ½ organic vegetable stock cube
  • ½ cup water


  1. Steam cabbage in steamer until tender.
  2. In another saucepan, heat milk, water, nutmeg and stock cube and add diced potato, sweet potato and onion. Cook covered on low heat until soft. Roughly mash.
  3. Add cabbage and mix well. Drizzle with butter and top with chives. Serve immediately.
