Tuna or salmon salad

This tuna/salmon salad is super easy to put together and also extremely healthy. The perfect lunch to take to work with minimal effort.

Ingredients

  • 250 g tuna or red salmon in brine
  • 1 handful black olives, pitted
  • 8 large lettuce leaves, washed and torn up
  • 2 spring onions, finely sliced
  • 2 eggs, hard boiled and halved
  • 3 tomatoes, ripe and diced

Dressing

  • 1 tbsp cold pressed olive oil
  • 1 tbsp tamari
  • 1 lemon, juiced

Method

  1. In a large bowl combine all ingredients, except the eggs.
  2. Shake dressing and pour over salad.
  3. Add eggs and season to taste. It’s as simple as that!
