Tomato and onion bake

  • 2 large onions, cut into very thin rings
  • 820 g tomatoes, canned or fresh, chopped
  • 1 tbsp basil, fresh chopped
  • 1 tsp mixed dried herbs
  • 3 garlic cloves, crushed
  • 1 cup of Greek feta, cut into small cubes
  • Salt and ground black pepper to taste


  1. Separate onion rings and place in casserole dish.
  2. Mix basil and mixed herbs with tomatoes and combine with feta, then place on top of onions.
  3. Bake casserole in a moderate oven for about 40 minutes until onion is tender.
