  • 6 lamb cutlets (3 per person)
  • 1 small chilli diced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • ½ tsp ground cardamon
  • 2 rosemary sprigs (optional)


  1. Place all ingredients into a sealed container, mix through and leave overnight or longer.
  2. Cutlets can be cooked on a frying pan, barbecue or baked in the oven. Cook them to your liking; usually a few minutes each side.
