Spicy Asian apple salad
This is a lovely, light and tasty spicy Asian apple salad that can be eaten with meats, fish, eggs, chicken, or on its own.

Ingredients
- 1 red or green chilli (more if desired)
- 100 g of baby spinach leaves or cos lettuce
- 1 cucumber
- ½ red capsicum
- 1 large tomato
- 1 red onion
- ½ bunch of fresh coriander
- 1 apple
- 1 ripe avocado
Dressing:
- Juice of one lime
- 2 tbsp of extra virgin olive oil
- 1 tbsp low-salt tamari
- 1-2 tbsp Greek yoghurt
Method
- Finely slice the chilli, spinach/lettuce, cucumber, capsicum, tomato, red onion and coriander leaves.
- Chop the apple into matchsticks or small pieces.
- Combine salad ingredients in a bowl.
- Dress salad with dressing.
- Chop the avocado into slices and decorate across the salad.
- Add the Greek yoghurt and garnish with coriander leaves.
