Spicy Asian apple salad

This is a lovely, light and tasty spicy Asian apple salad that can be eaten with meats, fish, eggs, chicken, or on its own.

Ingredients

  • 1 red or green chilli (more if desired)
  • 100 g of baby spinach leaves or cos lettuce
  • 1 cucumber
  • ½ red capsicum
  • 1 large tomato
  • 1 red onion
  • ½ bunch of fresh coriander
  • 1 apple
  • 1 ripe avocado

Dressing:

  • Juice of one lime
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp low-salt tamari
  • 1-2 tbsp Greek yoghurt

Method

  1. Finely slice the chilli, spinach/lettuce, cucumber, capsicum, tomato, red onion and coriander leaves.
  2. Chop the apple into matchsticks or small pieces.
  3. Combine salad ingredients in a bowl.
  4. Dress salad with dressing.
  5. Chop the avocado into slices and decorate across the salad.
  6. Add the Greek yoghurt and garnish with coriander leaves.
