Pecan crusted chicken

  • 1 cup ground pecans
  • ½ cup freshly grated parmesan cheese
  • 4 chicken breast halves
  • 2 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp ground coriander
  • 1 clove garlic, finely minced (optional)
  • ¼ cup lemon juice
  • Sea salt and black pepper to taste


  1. Pound the chicken breasts with a meat mallet to make them an even thickness.
  2. Place the ground pecans, cheese, coriander, garlic, salt and pepper in a shallow bowl. Put the lemon juice into another shallow bowl.
  3. Dip both sides of the chicken breasts in lemon juice then coat in pecan mixture.
  4. Heat the olive oil and butter in a large frying pan on medium heat. Cook the chicken until golden brown (approximately 3 to 5 minutes on each side).
  5. Serve with a salad or cooked vegetables.
