Pasta verdi

This pasta dish is made with fresh green herbs and gives you a mineral and vitamin boost to boot! Greens are high in antioxidants which are fantastic for cell health and the addition of hemp seeds provides essential fatty acids for healthy brain function.

Ingredients

  • 10 sprigs chives
  • 2 handfuls flat leaf parsley
  • 1 bunch basil
  • 1 cup rocket
  • 1 cup baby spinach
  • 1 handful dill
  • 4 anchovies
  • 1 tbsp capers
  • 2 cloves garlic, crushed
  • 1/4 cup pine nuts
  • 1/4 cup hemp seeds
  • 1/4 cup cold pressed olive oil
  • 200 g pasta of choice

Method

  1. Follow instructions on the packet to cook the pasta.
  2. While the pasta is cooking, put olive oil into food processor (to taste) and add all remaining ingredients (except hemp seeds) and blend until greens are puréed.
  3. Once pasta has finished cooking, drain and stir through green sauce and hemp seeds. Serve between 2 bowls and enjoy.
