Paleo scrambled eggs with spinach

This recipe is not only super easy but also delicious with the combination of scrambled eggs with spinach, mushroom and avocado. This meal also provides a good dose of protein and fat to stabilise blood sugar levels and promote fullness.

  • 4 free-range or organic eggs
  • 1 avocado
  • Handful of spinach
  • 1 tsp coconut oil
  • 1/4 cup mushrooms, sliced
  • Sea salt and cracked black pepper to taste


  1. Add coconut oil to pan and preheat on medium.
  2. Whisk eggs in bowl.
  3. Dice avocado and put to the side.
  4. Add eggs, mushrooms and spinach to pan.
  5. Once eggs are cooked add avocado.
  6. Add salt and pepper to taste.
  7. Serve immediately and enjoy!
