One-pan berry crumble

This one-pan berry crumble is the perfect guilt-free treat to satisfy any sweet tooth. Super easy to make and loaded with antioxidants and quality fats to protect against free radicals, boost brain function, improve skin health and aid nutrient absorption.

Ingredients

Berry base

  • 1 tbsp unsalted butter or coconut oil
  • 2 cups of mixed berries (strawberries, blackberries, blueberries or raspberries), fresh or frozen
  • ½ tsp Nature Sweet

Crumble

  •  1 cup almonds or walnuts
  • ½ cup pecans
  • 2 tbsp unsalted butter, melted or coconut oil
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • ¼ tsp sea salt
  • ½ tsp Nature Sweet

Method

  1. Preheat oven to 200 degrees Celsius.
  2. Start making berry base by adding butter or coconut oil to a medium-sized saucepan over medium-high heat. Add berries and Nature Sweet, cooking for 3-5 minutes or until softened.
  3. Start making crumble by pulsing the nuts in a food processor. Add butter or coconut oil, cinnamon, vanilla essence, sea salt and Nature Sweet. Pulse until mixture reaches desired consistency.
  4. Sprinkle nut mixture over berries and place on top shelf in oven for 7-10 minutes, or until golden and crisp on top.
  5. Remove from oven and allow to cool for 5-10 minutes. Can be eaten warm or cold. If desired, serve with a tbsp of full-fat Greek yoghurt and a sprinkle of cinnamon.
