Lemon pie chia pudding

If you are a fan of lemon curd flavoured desserts, this lemon pie chia pudding is bursting with lemon zest flavour and makes for an easy and healthy alternative to traditional desserts. Chia seeds are a nutritional powerhouse – they are a fantastic source of healthy fats, fibre and protein. They are incredibly versatile and easy to use in desserts. This pudding takes less than 5 minutes to prepare!

  • 2 tbsp chia seeds
  • ¼ tsp Nature Sweet
  • Rind and juice of ½ lemon
  • ½ cup coconut milk
  • 1 tsp pure maple syrup


  1. Mix ingredients together in a cup or bowl. Cover and allow to set in the fridge for at least 2 hours or overnight.

Note: You can easily double or triple the recipe to make more servings.
