Eggplant pizza

Utilising eggplant as a pizza base, this delicious recipe is a healthy, low carb alternative to a traditional pizza.

Serves 1


  •  1 large eggplant
  •  2 tbsp tomato paste
  •  2 tsp dried herbs
  •  1 garlic clove, crushed
  •  1 tomato, diced
  •  ½ red onion, peeled and diced
  •  Handful mozzarella
  •  ½ tsp salt
  •  4 mushrooms, sliced


  1. Preheat oven to 190’C and line a baking tray.
  2. Slice eggplant either lengthwise for larger pizza slices, or horizontally for mini pizzas, 2cm thick.
  3. Sprinkle the eggplant slices with salt on both sizes, place on a tray and bake in the oven for about 20 minutes.
  4. In the meantime, mix the tomato paste, garlic and herbs together.
  5. Remove from oven and smear the eggplant slices with the tomato paste mix.
  6. Top with diced tomato, red onion and mushrooms, and finish with the mozzarella.
  7. Place in the oven for about 5 minutes.
