Dairy-free choc banana fudge

Ingredients
- 4 tbsp macadamia nut butter
- 4 tbsp coconut oil
- 4 tbsp cacao or cocoa powder
- 1 very ripe banana
Method
- Place all ingredients into a blender and blend until smooth.
- Scrape the fudge into a lined baking tray and smooth it into an even layer.
- Refrigerate the fudge for at least 3 hours.
- When set, use a large sharp knife to cut the fudge into 12 cubes to serve.
I wish my fudge came out looking as professional and as “high” as in the photo! It would have to be a very narrow baking tray to get this depth on the quantity of ingredients specified. I couldn’t find 100% macadamia nut butter anywhere so had to use one that was 50-50 macadamia / cashew. Tastes great but consistency is very soft even after hours in the fridge. Could happily eat it straight from the blender though!

Yes it is quite a soft fudge – storing it the freezer will harden it up better 🙂
That’s good that you still enjoyed the fudge. You could even do it in ramekins instead of a baking tray if you wanted it a bit higher.
