This coleslaw supreme recipe is a nice twist on traditional coleslaw. Store bough coleslaw contains added sweeteners and preservatives. This one uses fresh, wholefood ingredients and is loaded with antioxidants that keep our cells healthy.
2 cups cabbage, finely shredded (Savoy or Chinese)
1 cup red cabbage, finely shredded
1 medium onion, thinly sliced
1 cup carrot, grated or fine julienne strips
1 red capsicum, seeded and thinly sliced
½ cup parsley, roughly chopped
1 lemon, juiced
Sea salt and black pepper to taste
½ cup natural plain yoghurt or mayonnaise
¼ cup orange juice, fresh
¼ cup light malt vinegar
1 tsp hot English or seeded mustard
Ground black pepper to taste
Toss all the salad ingredients in a bowl.
Whisk together all the dressing ingredients and either toss through salad or serve on the side.
