Butter chicken

Ingredients

  • 2 tsp butter
  • 450 g lean chicken breast, diced
  • 170 g brown onion
  • 3 cloves garlic
  • ½ tsp fresh ginger
  • ¼ lemon, juiced
  • Salt and pepper to taste
  • ½ tsp cayenne powder
  • 2 tsp cumin powder
  • 1 tsp garam masala powder
  • 2 tsp coriander powder
  • 120 g tomato paste
  • 120 g Greek yoghurt
  • 150 g cabbage, finely shredded

Method

  1. Purée onions, garlic and ginger in a food processor. Fry chicken in butter in a non-stick frying pan on high until browned. Lower heat and add purée, fry for 5 minutes until well cooked. Add a little water if needed.
  2. Add lemon juice and 1 cup of water. Add all spices and plenty of salt and pepper. Heat tomato paste then add yoghurt. Reduce heat and simmer for half an hour. Add a little water if the sauce becomes too thick.
  3. Steam the cabbage. Serve chicken with cabbage and your choice of rice or cauliflower rice.

TIP: For a creamier finish, add a dollop of cream.
