Berry and nut breakfast parfait

This berry and nut breakfast parfait is dairy free, healthy and delicious, plus a cinch to make. Not to mention it can be prepared in advance for a breakfast on the go.

Ingredients

  • ¼ cup almonds, plus few extra to garnish
  • ¼ cup macadamias
  • ¼ cup walnuts
  • 1 tbsp pumpkin kernels
  • 1 tbsp sunflower seeds
  • ¾ cup blueberries
  • ¾ cup strawberries
  • 4 tbsp coconut yoghurt

Method

  1. In a small bowl, add the nuts and seeds, mixing well to combine.
  2. In a separate bowl toss the berries until well combined.
  3. Serve in a wide bowl or jar, layering the mixed nuts and seeds, berries and coconut yoghurt, topping with yoghurt and a few extra chopped almonds to garnish.
