Banana bread with mango chunks

  • 3 medium or 2 large ripe bananas
  • ¼ cup coconut oil
  • ½ cup coconut sugar
  • 2 tsp vanilla extract
  • ¾ cup coconut flour
  • ¾ cup whole-wheat flour (or gluten free flour)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 ripe mango, sliced into chunks


  1. Preheat oven to 175ºC and lightly grease a 23 x 13 cm loaf tin and set aside.
  2. In a large mixing bowl, mash the bananas then mix in coconut sugar, coconut oil, and vanilla extract.
  3. Sift in the flours, baking soda, cinnamon and salt and mix until just combined. Fold in mango pieces.
  4. Pour mixture into the loaf tin. Bake for 40-45 minutes or until an inserted toothpick comes out clean.
  5. Remove from oven and cool for 10 minutes in the tin, then cool on cake rack.
