Tuna or salmon salad
This tuna/salmon salad is super easy to put together and also extremely healthy. The perfect lunch to take to work with minimal effort.

Ingredients
- 250 g tuna or red salmon in brine
- 1 handful black olives, pitted
- 8 large lettuce leaves, washed and torn up
- 2 spring onions, finely sliced
- 2 eggs, hard boiled and halved
- 3 tomatoes, ripe and diced
Dressing
- 1 tbsp cold pressed olive oil
- 1 tbsp tamari
- 1 lemon, juiced
Method
- In a large bowl combine all ingredients, except the eggs.
- Shake dressing and pour over salad.
- Add eggs and season to taste. It’s as simple as that!
