Red kohlrabi salad
This red kohlrabi salad is incredibly crisp and refreshing. Not only does it taste delicious but it is really great for promoting healthy digestion and detoxification.

Ingredients
- 2 medium kohlrabi, peeled and grated
- 1 cup grated raw beetroot
- 1 red capsicum, sliced thinly
- ¼ cup chopped fresh coriander
- 1 carrot, cut julienne
Dressing
- 1 tsp grated ginger
- 2 tbsp flaxseed or olive oil
- Juice of 1 lemon
Method
- Combine vegetables together in a bowl.
- Combine ginger, oil and lemon juice together and drizzle over salad and toss.
