Red kohlrabi salad

This red kohlrabi salad is incredibly crisp and refreshing. Not only does it taste delicious but it is really great for promoting healthy digestion and detoxification.

Ingredients

  • 2 medium kohlrabi, peeled and grated
  • 1 cup grated raw beetroot
  • 1 red capsicum, sliced thinly
  • ¼ cup chopped fresh coriander
  • 1 carrot, cut julienne

Dressing

  • 1 tsp grated ginger
  • 2 tbsp flaxseed or olive oil
  • Juice of 1 lemon

Method

  1. Combine vegetables together in a bowl.
  2. Combine ginger, oil and lemon juice together and drizzle over salad and toss.
