Low Carb Spicy Chicken Patties
Serves 4
Preheat the oven to 180°C (160°C fan forced).
Stir fry garlic and onion in one teaspoon of olive oil in a pan until softened.
Place chicken mince into a large bowl. Add all other ingredients into the bowl, mix well and shape into patties.
Spray patties with olive oil spray and place on an oven tray.
Bake until cooked through, approximately 35 minutes.
Serve with a fresh salad.

- 2 cloves garlic, finely chopped
- 1 medium brown onion, chopped
- 500 grams chicken mince
- 1 carrot, grated
- ½ cup frozen corn kernels
- ½ cup fresh coriander, finely chopped
- 1 tsp curry paste of your choice (use more if desired)
- 1 tsp fish sauce (optional)
- 3 tsp cornflour
