Seafood Frittata


This delicious frittata can be served hot as a refreshing main meal and is also suitable to serve cold as picnic food. Very versatile and great to enjoy with family and friends.

This meal is high in protein and low in carbs and is great for those watching their weight!


170g can crab meat, drained

105g can red or pink salmon, drained

¾ cup milk (dairy or soy)

4 eggs, lightly beaten

¼ cup Parmesan cheese, freshly grated

¼ cup fresh chopped parsley

¼ teaspoon lemon pepper


Flake fish into a large bowl, add all other ingredients and mix well. Pour into a greased pie dish and bake in moderate oven for approximately 30-40 minutes or until light brown and set.

Serve, either warm or cold, with lettuce, tomato, cucumber, sliced red onion and grated carrot.
