Salmon with Coriander Pesto
serves 4
- 2 large salmon fillets
- 2 cups chopped fresh coriander
- 2 garlic cloves, crushed
- 2 tsp finely grated lime rind
- ¼ cup extra virgin olive oil
- Sea salt & black pepper to taste
To make the pesto combine all ingredients except the salmon in a mortar and gently grind with a pestle until a paste is formed. Alternatively place all ingredients in a food processor.
Place one salmon fillet in a baking dish. Spread the pesto evenly over the salmon. Put other salmon fillet on top.
Cover with foil and place in the oven.
Cook for approximately 30 minutes, or until the flesh flakes with a fork.
Rest the salmon for approximately 5 minutes and then slice and serve with a salad.
