Prawns with Watermelon and Rocket
Serves 4
250g seedless watermelon, peeled, cut into 1cm pieces
400g cooked prawns, peeled, leaving tails intact, deveined
500g rocket
2 tbs fresh lemon juice
2 tbs olive oil
½ tsp Nature Sweet Sugar Substitute
50g fetta
Fresh mint leaves, to serve
Combine watermelon, prawns and rocket in a large bowl and set aside until needed.
Combine lemon juice, oil and Nature Sweet in a jug. Season with salt and pepper to taste.
Pour over watermelon, prawn and rocket mixture and toss to combine.
Divide among serving glasses.
Crumble fetta over the top with mint to serve.
