Syndrome X Christmas Celebration Cake
1 cup natural sultanas1 cup chopped dates
1 cup chopped dried apricots
1 cup Brazil nuts, roughly chopped
½ cup sunflower seeds
½ cup pepitas
¼ cup sesame seeds
¼ cup LSA
1 teaspoon mixed spice
1 teaspoon ground ginger (optional)
½ cup brandy
1½ cups orange juice
2 eggs, beaten
2 cups wholemeal self-raising flour
Place all ingredients except flour and eggs into a large saucepan. Slowly bring to boil, turn down heat, simmer 1-2 minutes, then remove from heat and cool. Add flour and eggs to cooled mixture and mix until combined. Spoon into a 23cm paper lined cake tin and bake in a slow oven at 150°C for 1 hour then test with a skewer. Skewer should be clean when removed from cake. Cook a little longer if necessary. Suitable for diabetics in a moderate serving.
Syndrome X Light Christmas Cake
½ cup cold pressed oil½ cup brown sugar
2 teaspoons Nature Sweet Sugar Substitute
1 egg
500g mixed dried fruits
3 medium apples, peeled and grated
2 cups wholemeal self-raising flour, sifted
with 2 teaspoons bicarb soda
½ teaspoon each of nutmeg, mixed spice, ginger and cinnamon
½ cup chopped walnuts
¼ cup brandy
Pour brandy over dried fruit and stand for 1 hour. Beat together the sugar, Nature Sweet, oil and egg for 1 minute. Add dried fruits, apple and nuts, and combine well. Now add sifted flour, bicarb soda and spices. Place mixture in a 23cm square paper lined cake tin and bake in a moderate oven for about 1 hour. Test with a skewer. Cool in cake tin. Do not ice, but you can sprinkle extra nuts on top before cooking. Serve cut into thin slices.
The use of Nature Sweet in this recipe has improved the glycaemic balance.
