Lemon macadamia balls

These lemon macadamia balls make for a great afternoon snack or lunch box treat. Macadamias are a good source of vitamin E, offer cardiovascular benefits and can help to curb appetite.

Ingredients

  • ¾ cup macadamia nuts
  • 1 cup desiccated coconut
  • Juice and zest from ½ fresh lemon (can add more zest for a stronger lemon flavour)
  • ½ tsp vanilla extract
  • Pinch of Himalayan or sea salt
  • 2 scoops  Synd X Slimming protein powder
  • 2 tbsp  coconut flour
  • 1.5 tsp Nature Sweet
  • 3 tbsp coconut oil
  • Extra coconut for coating balls

Method

  1. Process macadamia nuts in food processor.
  2. Add the rest of the ingredients except the extra coconut for coating into the food processor until well combined and consistent. This mix should form a nice size ball.
  3. Take a tablespoon of the mixture and roll it into a ball and coat in the extra coconut.
  4. Place the balls in the fridge or freezer for a few hours.
  5. Store in an airtight container in fridge or freezer.

Note: You can use a dairy-free protein powder such as Ultimate Superfood or extra coconut flour.
